Spaghetti alla Chitarra — “guitar spaghetti” — takes its name from the traditional wooden frame strung with steel wires used to cut the pasta into perfectly square strands. Unlike round spaghetti, the square cross-section creates four distinct edges that grip sauce from every angle, delivering a more textured, satisfying bite. A specialty of Abruzzo, it’s one of Italy’s most distinctive regional pasta shapes.
