Every February, when Apulia's fennel reaches its most tender, fragrant peak, I Contadini's team heads to the open fields to hand-select only the finest bulbs. Each one is carefully sliced into delicate, paper-thin strips — the same technique used for traditional carpaccio — then gently marinated in a light cider vinegar brine and preserved in oil. The result is fennel that stays crisp, vibrant, and full of its natural anise fragrance, as if it were just harvested.
