Like the Agrumolio citrus oils, Geraci Erbolio Rosemary is made using a co-pressing method — freshly harvested Nocellara del Belice olives are pressed simultaneously with freshly cut Sicilian rosemary, capturing the herb’s essential oils at the moment of cold extraction. The oil is then aged for four months under nitrogen in steel silos to preserve its freshness and aromatic integrity. No infusion, no artificial flavoring — just the pure, resinous character of rosemary woven into a premium Sicilian EVOO.
